Salad Dressings
Ginger & Lemongrass Dressing:
Chop and combine the following:
Large bunch of fresh coriander (cilantro)
3tbsp bottlegreen ginger & lemongrass cordial
6tpsp white wine vinegar
pinch of salt
2tbsp olive oil
Elderflower Salad Dressing:
Chop and combine the following:
Small bunch of basil
4tbsp cider vinegar
2tbsp olive oil
2tbsp bottlegreen elderflower cordial
salt & black pepper to taste
Chili Vegetable Noodle Bowl with Ginger & Lemongrass Broth:
3tbsp ginger & lemongrass cordial
600ml hot vegetable stock
150g fine egg noodles
1 tbsp stir-fry oil or olive oil
1 garlic clove
1 large leek – thinly sliced
1 red or yellow pepper – deseeded and thinly sliced
1 courgette – thinly sliced
2 heads pak choi or ½ head Chinese leaves – shredded
½ fresh red chilli – deseeded and thinly sliced
1tsp Thai red curry paste
salt and freshly ground black pepper
chopped fresh coriander to garnish.
Method:
1. Add the cordial to the vegetable stock in a large bowl and then add the egg noodles.
Soak for 4-6 minutes (or according to pack instructions).
2. Heat the oil in a wok or large saucepan. Stirfry the garlic, leek, pepper and courgette for 3-4 minutes.
Add the pak choi or Chinese leaves and chili and stir-fry for another 2-3 minutes.
3. Add the soaked noodles with the stock to the wok. Stir in the Thai red curry paste. Heat until just simmering.
Season to taste with salt and pepper. Ladle into bowls, garnish with chopped coriander, and serve.
Banana Elderflower Smoothie:
5tbsp Elderflower Cordial
1 banana
1tsp vanilla extract
450 ml milk
4tbsp low fat plain or vanilla yogurt
1tbsp clear honey
3 scoops of vanilla ice cream
mint leaves
Method:
1. Put the cordial, banana, vanilla extract, milk, yogurt, honey, 1 scoop of ice cream into a blender.
Whizz together for about 15-20 seconds, then pour into tumblers.
2. Top each glass with another scoop of ice cream, drizzle with honey and decorate with mint leaves.
Quick Dessert Toppings
White Chocolate Sauce:
Melt 100g white chocolate, add 150g whipping cream and 3tbsp of bottlegreen elderflower or ginger & lemongrass cordial. Beat with a spoon until smooth. Serve with fresh fruit pavlovas or meringues.
Dessert Sauce:
Stir 2tbsp of your favourite bottlegreen cordial into some cream before pouring or whipping it to serve with desserts.
